Auntie Rosie’s Version Of This Dreamy, Creamy California Casserole!

This creamy California casserole became an instant favorite in the family. It started when Rose came over to stay few nights into our home. Rose is one of my husband’s younger cousins who became very close to me when I was still just my husband’s friend. I used to tutor her in History because I was quite good at it. I made her pass her history exam because I was able to teach her how to remember dates and events without actually memorizing them and she has always been grateful. Anyway, when Rose came over, my twins were very happy. “Auntie Rosie” is their favorite because Auntie Rosie always plays with them.

 

Rose loves to cook. Actually, almost everyone I know from the side of my husband’s family knows how to cook. I heard my mother-in-law tell everyone once that when my husband and his brothers were still kids, one of them was always assigned to cook with her. Because of this little training, everyone in the family knew how to cook. That night, Rose volunteered to cook for us. Dinner was composed of salad, which made my twins’ noses scrunch up cutely, a simple upside down cake for dessert, and the creamiest casserole I have ever tasted.
