Mama’s Most Convenient Casserole Recipe To The Rescue!

We visited my husband’s parents a week ago. Mama, that’s what I call my mother-in-law, called weeks prior to that, asking if we could bring the kids over because they missed them. We rarely got to see my in-laws, so my husband and I made sure we scheduled a visit to them. Unlike my parents who lived three hours away, my in-laws lived at around six to seven hours away. It’s not really convenient for them to travel most especially because Papa easily gets dizzy on the road. Plane is out of the question because he doesn’t like planes.

My husband and I decided that it’s better if we’re the ones who come to them. We left early Saturday morning via plane and landed an hour later. Papa was already waiting for us with his pick-up truck.

We had a really good time in their place. My kids were so happy to be with their paternal grandparents and enjoyed every second of it. My husband even got to see a few hometown friends and he looked happy.

I was happy too because my in-laws have always been welcoming. Mama also spoiled us all with her amazing food, preparing roasts and pastas for us to consume. Dessert was always on the menu too; as well as casseroles for breakfast.

I will never forget Mama’s ham and hash brown casserole, which we had the next day because of all the leftovers from dinner. I must have eaten two servings of that. Nothing beats a good homemade casserole for breakfast!
