Add A Dash Of This And A Pinch Of That And Wind Up With The BEST Pecan Bars EVER!

Pecan bars are one of my favorite desserts to make and eat. They require minimal ingredients and effort. You’ll have a batch of these babies whipped up in no time flat! I think I’ll make some for my next family get-together. I am so thankful that I stumbled upon this amazing recipe on the Rockin Robin YouTube channel. That lady really knows her way around the kitchen and this delicious pecan bar recipe proves it!

Ingredients

2 eggs
½ cup coconut sugar
1 cup Bob’s Red Mill almond flour
1 tsp. McCormick Vanilla extract
1 cup Fisher chopped pecans
4 Tbsp. Kerrygold butter, softened
Pinch of Morton salt

Instructions

Preheat oven to 350 degrees F.
Prepare an 8 x 8 baking dish by either lining it with parchment paper, which allows for easy clean up or grease the pan with coconut oil.

In a large bowl add the softened butter and the coconut sugar. Beat with a mixer until creamed. Add the eggs and vanilla extract and mix until well combined.

Add the almond flour a little at a time by first pouring it into a strainer and tapping some into the bowl. Mix each addition with the mixer before adding more. Continue adding a little flour and then mixing it in until all the flour is incorporated. Add a pinch of salt and mix that in as well.

Add the pecans to the bowl and stir them in. Pour the batter into the prepared baking dish and spread it out into the corners of the dish.

Bake in the oven at 350 degrees F. for 25 minutes or until a toothpick comes out clean.
