Stuffed pork chops are probably not the first thing that comes to mind when people start talking about holiday menus.

I sure had never even thought about making pork chops for Christmas, even though my whole family really loves them. I guess I thought it wouldn’t be “festive enough”, since we’re usually having pork chops on a regular weeknight. But then a friend of mine mentioned a recipe she had and I got curious.

Her recipe was for stuffed pork chops, with dried cranberries and everything – and she made it sound so delicious that I thought, maybe I should make them over the holidays, after all. I still had my doubts about it, though, and she could tell I wasn’t sure about it. So she invited me over for dinner!

She made these stuffed pork chops and when I had my first bite, I knew this was it. I couldn’t even imagine serving anything else anymore! I’m going to be serving these with my special, mashed sweet potatoes that I’ve been making for 15 years. I think they’ll be the perfect pair!
