My all-time favorite drink? Mojito, without a doubt. I love the flavor, but I hardly ever enjoy one because they’re usually way too strong for me to handle! But, whenever I go on vacation it’s a tradition that my husband and I get one – no matter where we are. I’m hoping some day I would be able to travel to Cuba; apparently that’s where the drink is from, and I would love to find out if it’s extra delicious there!

When my sister-in-law mentioned she had found a recipe for mojito dessert bars, it was like a dream come true. I get to have the mojito flavor, in a dessert?? I was wondering if these bars were going to be really difficult to make, but they weren’t. And they turned out absolutely divine – I’m definitely going to make these for New Year’s!

This recipe is using rum extract, but if you happen to have some rum available, you can use that instead. And we all know a mojito isn’t a mojito unless there are fresh mint leaves. So you’d better run to the store and get some!
