Mini Puff Pastry Squash Pockets – Game Day Appetizer!

Do you love spinach and artichoke dip? I grew up on that for many, many years because my mom was such a huge fan. 

She would make it for every single get together, party and family gathering.  We had it for Christmas, Thanksgiving, birthday parties, and even Valentine’s Day.  Yep, any time that she could possibly make it, she would take the opportunity and do it.

She’s cray cray if you ask me, but she just loves it that much.  Well, by association, I grew to like it so much as well! I would help her make it and encourage her to make it more often!

Well, this time, it was my turn to host Thanksgiving, and I knew my mom would not find the day complete without a dish of creamy spinach artichoke dip served in a bread bowl and using the bread chunks from the inside to scoop it out.

Well, I knew she wanted that so I decided to go with it, but switch it up a little.  After all, it was my first Thanksgiving and I wanted to impress.  Well, what I created was something absolutely spectacular and now my mom is hooked on this recipe!
