If I Could Only Keep One Soup Recipe, It Would Be This One

This Soup Is Made For Winter Evenings

As I am typing this, I’ve just returned from a sunny vacation and being back North is not exactly easy! We already got our first snow and it seems no amount of sweaters and knitted socks can keep me warm. Don’t get me wrong; I don’t hate winter, I just don’t want to feel cold! So I to add more soups to my meal rotation. I think a good, steaming hot soup is the best way to warm up on a cold day.

This red lentil soup from Stuffed At The Gill’s has been one of my favorites for quite a while now. Not only is this soup very filling, with lots of protein and fibres, but it is also super easy to make. And these small lentils cook a lot faster than, say, dried peas.

This recipe also comes with added vegetables and I think that’s what makes this so delicious. It’s perfect for a vegetarian diet, but you could also add ham or even shredded chicken, if you’d like a meaty soup (like my husband does!)
