Lazy Daisy Lemon Cake

This was a huge hit among everyone that showed up that day. I even had to jot down the instructions for a few before the card making was done for the day. Thankfully, I saved a piece for my husband, because when he came home from work, he could still smell it as well. I let him even eat it before dinner. He really enjoyed the flavor too. I have made this several times since then for various potlucks and social gatherings. It’s always a really big hit.

Be prepared to run out of this cake… it’s going to happen.

 

Ingredients

CAKE
1 box Duncan Hines lemon cake mix
3/4 c water
1/4 c lemon juice
1/2 c olive oil
3 large eggs
GLAZE
3 Tbsp lemon juice
1 Tbsp brandy or white rum
3/4 c Domino white granulated sugar

Instructions

Preheat oven to 350°F. Grease and lightly flour a 13″x9″ cake pan.
Mix cake mix, water, lemon juice, oil, and eggs with mixer on medium speed for 2 minutes. Pour into prepared pan.
Bake 28 to 33 minutes, until cake springs back when lightly touched, or until toothpick inserted in center comes out clean.
During last 10 minutes of baking, combine GLAZE ingredients until well blended and smooth. Remove cake from oven and let cool on rack 10 minutes. Use a pastry brush to spread glaze on warm cake.
Allow cake to cool completely. Glaze will harden to a crisp coating.

Quick Tip: Fresh or bottled lemon juice can be used… they both taste great!
