Orange Marmalade Cream Cheese Stuffed French Toast

My aunt and uncle were newly retired and on a trip traveling around the country.

They had moved to the big city after getting married when I was very young. We didn’t see them a whole lot, but around the holidays and usually for a visit in the summer they would come back home. They always seemed so sophisticated and they always had the most interesting stories from where they lived. I would just sit and listened to them for hours. It was fascinating to me. Now that they were traveling, they said they would be stopping through where my husband and I had moved to for a visit. I was so excited to see them.

I told them that they should at least spend a night with us so they can relax a bit. They agreed, after all, they had no more time constraints. Now that I knew they were going to be with us for breakfast, I had to find something super special to make them.

I found this recipe for French toasted orange marmalade and cream cheese on the web and thought it sounded marvelous. Not only did they look tasty, they appeared to be pretty simple to make.

So that morning that they were with us, I started tossing these together and I baked up a whole loaf of bread worth. They were so yummy!

We sat at the table for hours and ate, visited, and sipped our coffee and tea. It was one of the best memories I have of those two…and now that they know I can make these, hopefully, they come back around.
