Potato Chip Chicken Casserole – It’s A Real Cruncher!

The other day, I was at a new fusion restaurant in my area.

It is called Latin House and fuses Hispanic and American cuisines.  They take really plain foods and make it into some crazy combinations.  My husband’s favorite is the Elvis burger.  I do not know if you have ever had one, but at this restaurant, that is a burger served with a smear of peanut butter and jelly topped with a sweet plantain.  It is such a crazy cool combinations of classic meals that turn out to be so cool!

Well, one of my favorite things to eat there is a potato chip crusted chicken.  To be honest, I totally do not understand how this equates to fusion, but it is on the menu and delicious.  It is a juicy chicken breast, seasoned perfectly and then they bread it with any potato chip you would like.  They have so many options such as Lays, Doritos, Fritos, and any other chip you could possibly think of.  You can even mix and match and go for a combination of multiple types of chips. It is truly delicious and so much fun to create your own combination of potato breast chicken breading.
