Welp, you came to the right place, sugar lips! This Mexican casserole was derived from an Amish cookbook that one of my favorite bloggers over at Full Bellies, Happy Kids! shared with us. Wow, it doesn’t really get any better than this, folks. I even whipped up a batch of guacamole to use as a garnish on this amazing casserole. In fact, I ate mine with guac, sour cream, and salsa. It was pretty dang delicious.
My kiddos told me that I should make this Mexican casserole every day. I told them that if I made it every day they would grow bored of it and not like it anymore. They didn’t seem to believe me. LOL
