When he came home from school that day, he was still wearing the same grin and prideful look that he was that morning. When he reached my car, he couldn’t wait to show me that the whole pan was empty.
“Everyone loved these Mom! Even my teacher said they were really good!” Well, that was fantastic! I asked to make sure he told everyone that he had helped and he said that he did. He also said, “I want to make these again this weekend for everyone at home… can we?” Of course I said yes!
1/2 lb bacon
1 egg, beaten
3/4 cup McArthur milk
1 3/4 cup Gold Medal all purpose flour
1/4 cup Domino sugar
1/2 cup crunchy nugget cereal
1 cup Kraft shredded cheddar cheese
Cook bacon-drain but reserve dripping, if necessary add vegetable oil to measure 1/3 cup total.
In a small bowl combine dripping/oil, egg and milk – set aside.
Crumble bacon, set aside.
In a large bowl, combine dry ingredients, make a well in center.
Add wet mixture all at once; stir just until moistened. Batter will be lumpy.
Stir in cheese, bacon and cereal.
Fill greased or lined muffin cups 3/4 full.
Bake at 400 for 15-20 minutes. Makes 12.
