Potatoes And Cheese In A Casserole? Sign Me Up!

I have discovered that my family loves baked potatoes! For that reason, I try to incorporate them in any and every way I possibly can.  Sometimes that means making mashed potatoes, other times actually baked potatoes or in chunks, but their absolute favorite is when I serve it like this as a twice baked potato casserole.  It is full of all the flavors they love, and as their momma, I know they are eating well, and the best part is that I always have leftovers for tomorrow night because it makes so much.  What a win! My family could eat this casserole every day.

They absolutely loved this and I already have all the ingredients in my pantry to make it again this weekend!

 

Ingredients

7 medium red potatoes – baked

1/4 tsp salt and pepper

1 lb bacon, cooked and crumbled

3 c Daisy sour cream

2 c  Kraft mozzarella cheese, shredded

2 c Kraft cheddar cheese, shredded

3 green onion, sliced

Instructions

1 Cut baked potatoes into 1 inch cubes. Place half in a greased 13 x 9 baking dish.

2 Sprinkle with half the salt, pepper and bacon.

3 Top with half the sour cream and then the cheeses. Repeat layers.
