Despite Their Name, These Funeral Potatoes Will bring You Joy

I am a huge fan of potatoes.  I think I have mentioned that in the past. 

I mean, I will eat potatoes in any way, shape or form. Maybe in the way of a baked potato (crusted with sea salt is the only ahem, best way) or as mashed potatoes or even as a soup.  However I can serve up potatoes, I will eat them! They are just such a filling dinner with such amazing taste.  I promise I will never say no to them.

Well, everyone on my block knows that, so it is not uncommon for me to hear a knock on my door around 6 pm most evenings. It is usually neighbors who made dinner and had leftovers and they bring it on over.  They know I have babies and that my husband is not always home in time to help me with dinner, so they bring something.

I am so appreciative and love having them stay to share the meal with me when they do.  Well, the other day, my neighbor Molly brought over a beautiful casserole with a rotisserie chicken.  Just by the smell, I knew what that casserole was and I was thrilled….POTATOES GALORE!
