Chubby Checker’s Cheery Chocolate Cake

A typical day on an Amish farm includes waking up before the break of dawn, tending to the animals, making breakfast, and looking after little ones. A woman’s role in an Amish family is usually taking care of meal prep and household duties. A lot of Amish ladies will make cakes, cookies, and pies to sell in their family store. This Lazy Woman cake is a staple on many Amish farms because it is super easy to make and requires minimal ingredients.

2 cups Domino white sugar

3 cups Gold Medal flour

1 teaspoon Morton salt

5 tablespoons Toll House cocoa

2 heaping teaspoons baking soda

1 scant cup cooking oil

1 tablespoon McCormick vanilla

2 tablespoons Heinz vinegar

2 cups cold water


Preheat oven to 350.

Combine sugar, flour, salt, and baking soda in large bowl.

Sift in cocoa powder, and whisk all together.

Make a well in the center of the dry ingredients; add oil, vanilla, vinegar, and water.

Mix until thoroughly combined into a smooth batter.

Pour into a greased standard-sized springform pan and bake 30 minutes, or until a toothpick inserted in center of cake comes out clean. Cool completely, then frost.
