I love bacon because it has this extremely flavorful essence that doesn’t fail to make something extraordinarily delicious. It tastes good with anything, including these potatoes, which absorb the flavor of the bacon better. Yes, this is one side dish you will love.

 

Ingredients

1 lb. Hormel bacon thinly sliced

8 baby potatoes, halved or quartered

2 McCormick dried bay leaves

3-5 cloves garlic mashed

Kosher salt and McCormick freshly cracked black pepper to taste

 

Instructions

Preheat the oven to 395F.

Cook the bacon until nice and crispy. Set aside the bacon grease and the bacon bits.

Parboil the potatoes in boiling water for about 10 minutes. Then add the potatoes in a roasting tray, and coat with bacon grease.

Season potatoes with sea salt and pepper. Add garlic and bay leaves. Roast the potatoes at 395F for about 20 minutes, or until the skin is wrinkled. Top with the crispy bacon bits.

Quick Tip: Partly boil the potatoes in step 2 to reduce the roasting time. If you do not wish to do so, you can use raw potatoes but increase the roasting time to about 40 minutes, or until the potato skin is wrinkled.
