Get A Little Fancy With This Easy Baked Chicken Caprese

Baked Chicken Caprese is one of those meals you make to impress somebody with. think about preparing this meal for your significant other on your anniversary. Light a candle and play some soft music while you dine. How romantic! I know that this would make the perfect Valentine’s Day dinner. It’s easy to make but its appeal is totally fancy. I am definitely going to give this recipe a whirl the next time I make my hubby a dinner for the just the two of us.

I’m trying to avoid frying so this is another recipe I have created using items on hand and baking instead of frying. My boyfriend LOVED this and it was super easy to make. I served it with mashed potatoes and baby romaine salad w/balsamic but this would also be nice over buttered angel hair pasta or thin spaghetti.

I love eating this baked chicken Caprese over buttered spaghetti noodles. They give the meal an authentic Italian restaurant quality. Very yummy!

 

Ingredients

For breaded Chicken:

2 boneless, skinless organic chicken breasts

kosher salt and fresh ground black pepper

Bertolli olive oil

2 cups panko breadcrumbs mixed with a touch of freshly grated parmesan, garlic powder & dried parsley

Caprese Topping:

5 ripe strawberry tomatoes (or cherry/grape tomatoes), cut in half

4 slices fresh mozzarella, thinly sliced

4 large fresh basil leaves

 

Instructions

Preheat oven to 350 degrees.

Pound chicken just a bit to even thickness. Coat it lightly with some olive oil and season with salt and pepper. Drizzle a little olive oil into the breadcrumb mixture and stir to coat. Place the chicken breasts in the breadcrumb mixture, pressing down to adhere on each side. Transfer to a lined baking sheet and bake for 25-30 minutes.

Remove chicken from oven and on each piece place 2 basil leaves, 2 slices of cheese and 5 pieces of tomato. Lightly season the topping with salt and pepper. Turn oven to broil and place chicken back in oven. Broil until tomato starts to slightly blister and cheese melts and gets some color on it.
