Mexican Chicken: When You Want Something Good For Dinner

Here’s A Dish Your Whole Family Will Love!

I was having a few ladies over for a late afternoon get together. The husbands were out on a golf outing, and they weren’t expected to be back until dark. I wanted to make the afternoon more than just sitting around gabbing, so I told everyone to bring their favorite dinner recipes and we would cook for us, the kids, and the men. My husband had redone our kitchen for me for my birthday, and I honestly couldn’t wait to work it to its fullest potential. Every piece of equipment was running in that room that night.

Everyone came out with really good ideas and we had quite the spread. The dish that caught my eye the most was a chicken that my friend Maria had made. She said that it was her mom’s recipe, and it looked just like this one from Group Recipes.

We cut up the chicken breasts smaller so everyone could get a sample and man was it good. That was one of the first things to disappear. There were leftovers of some of the other items that got cooked up, but this one was complete cleaned out. That was one that I added to my recipe book that very same night.
