This Creamy Salad Just Put Cucumbers On A While New Level

You can make this yummy dish ahead of time and then store it in the fridge until it’s time to serve. I always keep some extra sauce around just in case the noodles soak everything up. I like a really creamy salad though, so it’s going to depend on what you personal preference is. If you don’t mind a dry salad, you can keep it and serve it just how it is. Whenever I make this I double the recipe just so that I can be sure to get some leftovers… they are incredible!

People aren’t going to believe the amazing flavor that comes out of this delicious pasta dish. Once they find out, they’re going to want to eat the whole bowl!

 

Ingredients

1 long English cucumber

1/2 lb medium sized pasta (such as penne or rotini)

1/2 sweet white onion

Dressing

1/2 cup sour cream

1/2 cup mayonnaise

1 teaspoon Domino sugar

1/2 teaspoon Morton salt

2 tablespoons fresh dill

2 tablespoons Heinz white vinegar

pepper to taste

 

 

Instructions

 

Combine all dressing ingredients in a small bowl and mix well. Set aside.

 

Thinly slice onion and place in a bowl of cold water. (see note)

 

Cook pasta al dente according to package directions. Run under cold water to stop cooking.

 

Cut cucumber in half lengthwise and remove seeds using a spoon. Slice into thin slices.

 

Toss all ingredients in a large bowl. Let sit at least 40 minutes before serving.

Quick Tip: Soak your onion in cold water for a few minutes to take the flavor level down a notch.
