Egg Salad Sandwiches… A True Classic

One of the first times I had egg salad was when my Mom made it for herself. She never gave it to us kids, because she said she figured that we weren’t going to like it. I think that she was just using it as an excuse though because she wanted it all for herself. The stuff was amazing. Okay, honestly, when I heard the name I didn’t think that I was really going to like it either, but I really did. Her recipe was almost identical to this recipe that I found on Recipe Lion, and it’s the one I still use to this day.

I like to take these to church luncheons because it’s a great dish that can easily be doubled or even tripled if you are expecting a bigger crowd.

Don’t worry about having any leftover, because chances are you aren’t going to. In the rare occurrence that you do though, they hold up nicely in the fridge for several days. Enjoy!
