Get Shakin’ With This Earthquake Cake!

This cake is pretty simple to make. It’s easy and delicious. Those are three of my favorite things to make. I like making things that doesn’t require me to stand in the kitchen all day long. This cake is simple and to the point. I do like to add a few things to this cake though. I like to add some delicious chocolate chips to the top of the cake when I first take it out of the oven. That makes it even yummier. My aunt told me to dress it up however I wanted. So, I did just that. My kids absolutely loved this cake and I get to tell them the story behind it to. They never got to meet my great aunt, but they sure are thankful for her introducing this cake to me!

Ingredients

1 cup coconut
1 cup pecans
1 box Betty Crocker chocolate cake mix
3 1/2 cups powdered sugar
1 8oz. Philadelphia cream cheese
1 stick oleo/ Land O Lakes butter

Instructions

Mix the coconut and pecans, press into buttered, floured 10 X 15 pan. Prepare cake mix as directed and pour over coconut and pecans. Mix together sugar, cream cheese and oleo. Spoon over cake mixture. Bake 350 degrees for 1 hour.
