Stuff Me Silly Stuffed Pepper Casserole!

I usually add more peppers in this casserole than what the recipe calls for. I also like to cut them into bigger chunks too. Sometimes I like to add a little more veggie to this casserole and I will add in zucchini and squash as well. I usually like to add in more cheese too. I get a little crazy with the add on’s sometimes, but I think that a little jazzing up is a good thing. This recipe is great how it is though and I usually do it the way it is called. Try this recipe and you will love it!

Ingredients

  • 2 cups Swanson chicken broth
  • 1 cup rice (not instant)
  • 1 lb ground beef (I used meatloaf mix)
  • 1 medium onion, chopped
  • 2 medium bell peppers, seeded and chopped
  • 1 1⁄ 2 cups Prego spaghetti or 1 12 cups Hunt’s tomato sauce
  • 1 cup Kraft shredded cheddar cheese

Instructions

  1. Boil broth and pour over rice in greased 9 x 13 ” pan.
  2. Brown meat with pepper and onion. Drain well.
  3. Add sauce and pour over rice.
  4. Sprinkle with cheese.
  5. Bake at 350 degrees for 45 minutes uncovered.
