Strawberry And Rhubarb Custard Pie Oh My!

I love this pie so much because I got to be a part of the process of making it. My grandmother would send me out into the garden to get some rhubarb. I loved picking the rhubarb and would examine ever single stalk to make sure that I got the best ones. Sometimes I would just eat it raw! I also got to go to the strawberry patches and pick strawberries too. I loved doing both of those things and then seeing what I had picked end up in this delicious pie. This is a memory creating pie that you will love!

Ingredients

  • 1 1cups rhubarb, cut in 1 ” pieces
  • 1 1cups sliced strawberries
  • 1 cup Pioneer white sugar
  • 2 tablespoons Land O Lakes butter
  • 1 egg
  • 2 tablespoons Gold Medal flour
  • 1 uncooked pie shell

Topping

  • 2 tablespoons Domino’s brown sugar
  • 3 tablespoons Gold Medal flour
  • 2 tablespoons Land O Lakes butter

Instructions

  1. Place rhubarb in a bowl and cover with boiling water for about 5 minutes.
  2. Meanwhile, with a mixer, mix sugar, egg, butter and flour until smooth.
  3. Strain rhubarb well.
  4. With wooden spoon, add strawberries and rhubarb to batter and mix.
  5. Pour into uncooked pie shell.
  6. Mix topping ingredients with a fork, and sprinkle over uncooked pie.
  7. Bake at 375 for 50 minutes or until set.
  8. Top with whipped cream if desired.
