This Pasta Salad Will Make You Feel Like Royalty

The party went off really well. My boy was just full of smiles seeing all the friends and family that had showed up to help in celebrating his special day with him. There is nothing quite like a graduation party. I know that I remember mine. It was so fun to know that I was finally done with high school and moving on to college. My boy was the same way. He thanked me at least twenty times for everything. He really enjoyed this salad too. Pasta is one of his favorite foods, and Caesar is his top dressing, so this was just right for the occasion.

I make this for me and the hubby quite frequently now. It’s just right for a meal during the week.

 

Ingredients

8 ounces rotini pasta (approximately 3 cups)

2/3 cup sun dried tomatoes julienne cut

1 cup Del Monte baby peas

2 stalks celery sliced

1/4 cup red onion finely chopped

3/4 cup Newman’s Caesar dressing

1 1/2 cups chopped rotiserrie chicken

3 tablespoons fresh parsley finely chopped

 

 

Instructions

Cook pasta according to box instructions. Drain well.

In large bowl combine pasta, sun dried tomatoes, baby peas, celery, onion, Caesar dressing, chicken and 2 tablespoons parsley. Stir to combine. Sprinkle with remaining parsley.

Quick Tip: This will store for a few days in your fridge. You may have to add more dressing.
