Easy-To-Make Quick-To-Disappear Chicken Fajita Melts

Have you ever gotten or made fajitas? They are so yummy! They are one of my favorite meals for sure. The only issue I have with them is they are difficult for the kids to eat. They haven’t mastered that whole tucking of the tortilla shell thing. There is always stuff falling out all over the place. It’s frustrating to watch them struggle eating, because they usually just give up and go play. All that hard work, or money is gone to waste. Unless of course I pull the Mom move and clean off their plates.

When I saw this recipe on All Recipes for chicken fajita melts, I was rather curious about how they would go over. They were delicious first of all, and a whole lot easier to eat secondly. The kids could actually get them into their mouths.

I have done these with steak too and they are just as good. If you have picky eaters, you can leave out the peppers on theirs and it’s still scrumptious.
