How To Make Easy Loaded Potato Bombs

I made up several batches of these because I knew with the lovely combination of cheese, potatoes, and bacon, they were going to turn out fantastically. I had to sneak one after they came out of the oven, just to make sure that they were good…. then I had to sneak a few more. They were terrific! Out of all the appetizers that were made that day, these were the first to go. The party was a huge success. Now, we just have to wait for next year’s. Ingredients

1 lb Simply Made Garlic Mashed Potatoes

1/2 c. McCormick’s real bacon bits

1 tsp Morton salt

1/8 tsp pepper

1 1/2 c. Sargento Colby-Monterey Jack cheese, shredded, divided

 

 

Instructions

Preheat oven to 350 degrees.

Warm mashed potatoes in microwave until easy to stir. In a large bowl combine the potatoes, salt, pepper, bacon bits and 1 c. shredded cheese.

Grease 10 muffin cups. Divide potato mixture between muffin cups and sprinkle with remaining cheese.

Bake 15-20 minutes or until golden brown around the edges. Let cool 5 minutes. Remove from pan.

Quick Tip: Wrap with a full strip of bacon instead of using bacon bits.
