This Ain’t Your Mom’s Meatloaf!

I usually double this recipe and cook it in an 8x 8 pan just so that I can be sure that there is enough to go around. There are five of us eating so the smaller pan sometimes just isn’t enough. This is always paired up with mashed potatoes. When we are really hungry, I will do a stuffing or pasta side dish too. Add in a steamed veggie and dinner is complete. I know that nobody is leaving without a full belly when brown sugar meatloaf is on the table. Check out what they are saying about this recipe over at All Recipes:

Ingredients

1/2 cup Domino packed brown sugar

1/2 cup Heinz ketchup

1 1/2 pounds lean ground beef

3/4 cup milk

2 eggs

1 1/2 teaspoons Morton salt

1/4 teaspoon ground black pepper

1 small onion, chopped

1/4 teaspoon ground ginger

3/4 cup finely crushed saltine cracker crumbs

 

Instructions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5×9 inch loaf pan.

Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.

In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.

Bake in preheated oven for 1 hour or until juices are clear.
