Ambrosia Pie: A Dessert for Warm Summer Days

When we have our summer BBQ for our family reunion, this is the dessert that I take. I usually take a few of them because they go so quickly. Kids, adults, everyone just loves it. They are so quick and easy to go together too, that I don’t mind making up a few of them. If there are any leftovers, people are fighting to take them home so I still have nothing to worry about there! Check out what they are saying about this recipe over at Spend with Pennies:

It’s a no-bake quick dessert that keeps you out of the kitchen and out in the sunshine!

 

Ingredients

1 pre-made graham crust

2 cans (8 oz) crushed pineapple, undrained

1 package (6 servings size) Jello instant vanilla pudding mix

1 cup Daisy sour cream

1 tablespoon lemon juice

1 cup flaked sweetened coconut

1 cup Kraft mini marshmallows

1 cup canned mandarin oranges

Whipped cream for decorating (optional)

 

Instructions

Combine crushed pineapple, vanilla pudding mix, sour cream and lemon juice until well mixed.

Stir in marshmallows and coconut.

Gently fold in oranges.

Spoon into graham crust, cover and refrigerate 4 hours or overnight.

Decorate and serve.

Quick Tip: Don’t drain the pineapple… you need the liquid to make the pudding.
