Here’s A Quick Way To Get An Authentic Italian Meal On The Table

It was the start of the Spring season sports for my kids. I knew what that meant. Crazy schedules, getting home late, and lots of food that we probably shouldn’t be eating quite so often. This year though, I vowed to try something different. I knew there were quick homemade meals out there floating around. It was up to me to find them. In my search, I stumbled upon this 20 minute chicken parmesan on BigOven. I didn’t know that was even possible. Such a yummy meal in so little time?

I simply had to test it out. On one of those days when I knew we were going to be in and out of the house quickly, this is what I had on the menu. I got to work when we had about 45 minutes or so to be out the door again. Much to my amazement, and delight, this came together very quickly.

I had dinner on the table in about 20 minutes giving us time to eat without having to scarf it down. It was something like I’ve never seen before. A homemade meal during Spring sports? This is one that will be sticking around until the kids graduate… and probably beyond!

Quick Tip: Chicken tenders are a nice substitute for the breasts.
