Nobody Better Lay A Finger On My Brown Sugar Butterscotch Cake!

 

When I think of butterscotch I think of my grandmother. She always made these wonderful butterscotch cookies. She would have them in the same spot, in the bottom cupboard so that each of us kids could reach them ourselves. I don’t think that I ever saw that cookie container empty. I always loved the butterscotch taste and it gives me such a nostalgic feeling every time I taste or smell it.

I needed to make a cake for a wedding shower and I didn’t want to do the same old chocolate or vanilla cake.  I wanted to make something a little more on the unique side. So, I was thinking about different dessert flavors that I loved and I instantly thought of grandma’s butterscotch cookies. I decided that I was going to make a butterscotch cake!

This recipe seems like a lot, but it’s a lot easier than you think. The end product is totally worth it. You don’t see too many butterscotch cakes, so it’s definitely a recipe that people will be delightfully surprised to see. I like to add a a dollop of whipped cream on top. I happen to be a whipped cream fanatic and it goes perfect with this cake.
