Hop On Board For This Simple Stove Top Meal

I had taken the entire family to this potluck fundraiser, so my husband was sure to take a big helping of this knowing that I made it. He’s a little weird when it comes to potlucks. You never know who made it and what you’re going to get is what he says so he really treads lightly. He scarfed down the whole helping that he took and then a few days later when I routinely asked him what he wanted for supper, he asked me to make this again. Even the kids liked it when it was fresh from home. Check out what they are saying about this recipe over at Recipe Lion:

“This looks like the perfect way to jazz up regular mac ‘n cheese! I love the hearty ingredients in here! Definitely the perfect comfort food for the winter.”

Take your plain mac and cheese from boring to wow!

1 small onion, finely diced

1 green bell pepper, diced

1 clove garlic, minced

1 (15 ounce) can Hunt’s tomato sauce

1 (14.5 ounce) can Hunt’s petite-diced tomatoes, drained

1 (10 ounce) box Horizon Organic White Cheddar Cheesy Deluxe Mac and Cheese

Instructions

In a large skillet or Dutch oven, cook ground beef, onion, bell pepper, and garlic over medium-high heat until no longer pink. Drain and return to skillet. Stir in tomato sauce, corn, and diced tomatoes.

Quick Tip: Any small pasta and cheese blend will work in this dish in place of the boxed macaroni.
