This Manicotti Makes Italian Cooking Easy

My brother had been away serving in the military for several years. He was ready to get out and come home though, and his time with the service was done. After not seeing him for over a year, and him being gone for four years, it was an excitement that nobody in the family could contain after hearing that he was coming home. I was always the planner in the family, so I decided that we would hold a welcome home bash for our hero.

In a phone call he made to my mom he had mentioned how much he had missed home cooked Italian cuisine. He wanted some pasta! Mom made the bet manicotti on the planet. I’m not sure where she got her recipe, but it was a lot like this one from All Recipes.

I asked her if she would help me make it for the party and there was no hesitation. I wanted her hands in there, plus I wanted to learn how to make her famous dish. It was a fun day getting ready for him to come home, and my brother ate almost this entire pan himself!

What little leftovers we had got packed up and sent back to his house with him. He said he ate them just a few minutes after he walked in the door, even though he was still stuffed!
