BBQ Beef Biscuits To Take On The Go!

These work great when my kids have a game or practice after school and we don’t have time to sit down for dinner. For that few minutes that we have between them getting ready and heading back out the door, these can easily be eaten and they are really filling. I just get them ready a few minutes before they are going to be home from school and then pop them in the oven when they get in. Everyone gets a little something in their belly that keeps them full until we get back home. Check out what they are saying about this recipe over at Our Table For Seven:

Kids and adults alike love these little biscuits for a meal or a snack.

 

Ingredients

1 lb ground beef (or turkey)

1 TBSP minced onion

1 cup Kraft cheddar cheese, divided

12 count Pillsbury refrigerator biscuits

1/2 cup Sweet Baby Ray’s BBQ sauce

chopped green pepper, for garnish, optional

 

 

Instructions

Preheat oven to 375 degrees. Grease a 12 count muffin pan.
Brown meat with minced onion in a large skillet. Stir in BBQ sauce and 1/2 cup of cheese.
Press 1 biscuit into each cup. Spoon meat mixture evenly over biscuits.
Bake 10 minutes. Remove and sprinkle tops with remaining cheese.
Bake an additional 3-5 minutes until biscuits are brown and cheese is melted.
If desired, garnish with chopped green pepper.
