This Is Definitely Not Mom’s Short Ribs Recipe

As a kid, the number of my favorite food could be counted using the fingers of both hands. While I was not as picky as my brother, there were very few dishes that really took my breath away. Most of them were desserts because who couldn’t say no to any sweet treat? I only have a few main courses as a favorite, and they all involved beef and chicken. I always loved chicken in pastas and roasts. Chicken is less flavorful than beef so it tends to absorb most flavors really well. Pasta involves a lot of flavors so chicken is really perfect as a pasta ingredient.

Beef on the other hand tastes really good with mild-flavored ingredients like vegetables. I love beef stew so much because the flavor of the beef is really the one being emphasized. The vegetables and the sauce- they are just supporting tastes.

This braised short ribs tagine is a kind of stew that achieves that kind of taste. I am fortunate that I was able to come across this while searching for other stew recipes. There is a different kind of flavor in here that will surprise you.

Tagine in this recipe is paired with quinoa. I have never seen a much perfect pair than these two. So go ahead and try this for your family- you’ll never regret it.
