This Cheesy Casserole Is As Beefy As It Is Easy

There was this memory from my childhood that I will never forget. It was one of those days when I woke up early. Mom was in the kitchen already, preparing our breakfast for us. She asked my to help since I was awake already. I loved helping my Mom cook most especially simple casseroles. As a kid, I could easily remember such recipes. They didn’t need complicated steps and methods- I could easily store them in my mind. I always knew when Mom would be making casserole- she would take out everything on the fridge and line them up in the kitchen counter.

Casseroles are easy because they didn’t need precise measurements from ingredients. You can easily omit an ingredient or substitute one for the other. Casseroles are pretty adjustable, which makes it ideal for breakfast when you don’t have a lot of choice for food.

Most of my Mom’s casserole recipes were her invention. She loved putting together leftovers in one dish an sprinkling cheese all over them. I never complained because I considered myself lucky enough to taste them.
