The Noodle In This Pesto Shrimp Recipe Is Made Of What?

Every day is pesto day for me, if I can help it. My obsession with pesto overpowers my obsession with anything meaty and cheesy- and that is a huge thing. For someone who came from a family of meat lovers, having pesto as my favorite is some sort of deviant. The truth is, I was deprived of pesto when I was a kid- not in a bad way of course. It’s just that my Mom rarely made pesto so I didn’t have the chance to fall in love with it  earlier. I first tasted pesto when I was in high school and at the house of one of my friends. Ever since that day, I became a pestoholic.

My friends kept teasing me before because of my love for it. Every time we eat at an Italian restaurant, I will always order pesto. Even if they suggest any other type of pasta, I will always end up eating pesto.

Since I am addicted to it, I made sure I have the best pesto sauce recipe with me. I almost always use it in everything I cook- fish, meat, and of course, pasta. My husband is addicted with my pesto sauce- he says nothing can ever compare.

Speaking of pesto sauce, this pesto recipe is going to surprise you. Instead of the usual pasta, it uses something else; something healthier- zucchini! Oh yes, zucchini. But I am telling you right now- you are going to love this.

Quick Tip: If you are not a fan of parmesan or you don’t have a stock of it, it’s fine. You can use any type of cheese for the pesto.
