Un-Frying Shrimp Tastes A Little Something Like This – GUILTLESS!

I visited my parents a few days ago because I was near the area for work. I had to stay at their place overnight because I needed to meet with a client for a meeting. I loved sleeping in my old bedroom really. It’s where my family stays whenever we come visit, but it’s still different when it’s just me in the room. Old posters of my favorite bands were still posted on my makeshift bulletin boards. My friends’ letters were also still there, with the ink fading little by little. While I missed my own family, my parents’ home is still a “home away from home”.

While I was there, my parents spoiled me. They really missed having someone living with the two of them. Mom has always been a sentimental person; and she still treats me and my brother as her babies whenever we come home. She fed me with so much home cooked meals I felt like I was going to burst.

One of the highlights of my food experience was the dinner before my flight the next day. Mom made some chicken macaroni salad, apple cobbler for dessert, and these amazing oven-cooked shrimps. I must have eaten most of the shrimps on the basket and I have no regrets.

Mom said I should try the shrimp recipe as it’s pretty healthier than most shrimp recipes. It involves very little oil and has the crunchiest and tastiest batter. I went home with her recipe on my pocket- my version has never been as good as Mom’s.
