Country-Style Dinner For Two: Smokin’ Hot Barbecue Pork Ribs

I found myself having the tastiest company a few nights ago-these smokin’ hot slow cooker barbecue pork ribs. I was home alone. My parents-in-law called and asked if we could come home for an impromptu reunion. One of my husband’s cousins which he hasn’t seen for a long time (he lives overseas) was visiting. Most of their family would be coming and I couldn’t allow my husband to miss such a reunion. My parents-in-law also requested for the kids to come; and I allowed them too.

So I found myself spending two days alone. I couldn’t come because of work, which my parents-in-law understood. However, I still wished I could come because I instantly missed my family.

To forget the feeling of melancholy, I cheered myself up by cooking the best dinner- appetizer, main course, and dessert. I made coffee mousse for dessert and asparagus wrapped in bacon for my appetizer. For my main course, I made these smokin’ hot barbecue ribs.

When I say “smokin'”, I didn’t mean super spicy. This recipe is just hot because it’s amazing. And since it’s being cooked in a slow cooker, it’s expected that it will be tender and more flavorful.

Eating these flavorful ribs made me forget about my solitude for a while. I enjoyed eating the tender ribs and the accompanying sauce. For a simple recipe, this sure was amazing!

Quick Tip: Slow cookers: 1 hour on HIGH = 2 hours on low. If you want to make these twice as fast, you need to cook them for 4-5 hours on HIGH. Since all slow cookers cook at different temperatures and different efficiencies, “stick a fork in it” an hour or two ahead of time and see if it is done.
