Wrap Yourself In The Comforting Blanket Of This Classic Recipe

One of my favorite food when I was a kid was my Mom’s corned beef and cabbage. I don’t get it why my brother and even some of my cousins never liked it. Mom’s corned beef and cabbage tasted so flavorful that even the neighbors would have invaded our house just to have a taste if it weren’t for my Dad guarding the door. Our neighbors always asked my Mom, “hey, what’s cookin’?” with their noses up in the air and their eyes closed. Yup. I told you. Everyone loved my Mom’s cooking.

My brother never liked it though. He always told us that the corned beef was tasteless and was so tough. He always ate a piece of bread for dinner because Mom never tolerated his pickiness.

Even up to now, my brother still didn’t like eating corned beef and cabbage. That is until he tasted one of his wife’s experiments. She used something in the broth that turned my brother’s opinion upside down.

Just like what’s being done in this recipe. My Mom only used water for the beef- she just added a few of her secret spices to flavor the beef itself. This time, however, instead of using plain water, the recipe says to use apple juice.

Yes, apple juice. At first I was skeptical in using it- apple juice for corned beef? But when my family tasted it, I knew I did right in following the directions.

Quick Tip: You must let the corned beef sit before cutting after removing from cooker. Otherwise, it will be stringy.
