This Dessert Feels Like You Are Freezing Fire

When I made this for my family, the three of them were helping me in the kitchen. My husband was doing some of the work because he’s better than me. I put him to work so he can use his skills even if this was a simple one. The boys were passing ingredients to me and my husband. I love it whenever we have a bonding moment like that. It feels nice to the heart. The kids also feel more important if you allow them to help in menial things. We had the dessert made in no time and ate it together.

Ingredients

  • 1 (19.8-ounce) Duncan Hines package brownie mix, batter prepared according to the package directions
  • 1/2 gallon Breyers strawberry ice cream, slightly softened
  • 1 (8-ounce) container Cool Whip frozen whipped topping, thawed
  • 1/2 cup Great Value sweetened flaked coconut, toasted

 

Instructions

  1. Bake the brownies according to package directions for an 8-inch round cake pan. Remove from pan and allow to cool completely.
  2. Meanwhile, line an 8-inch bowl with plastic wrap; pack with the strawberry ice cream. Cover and freeze until firm.
  3. Place prepared brownie on a platter and invert molded ice cream onto it. Remove plastic wrap. Spread whipped topping over ice cream and sides of brownie, then sprinkle with coconut.
  4. Freeze at least 2 hours, or until firm. Serve, or cover and keep frozen until ready to serve.
