Smokin’ Hot Sweet Potato And Blazin’ Black Bean Casserole

I woke up late one weekend because my husband and I hosted a small get together the previous night. The smell of something cheesy infiltrated my nostrils and carried me all the way down to the kitchen. The kitchen was occupied by someone standing beside the sink. It was my husband, donning an apron around the waist, with his back on me. He was washing the dishes. From the corner of my eyes, I could see the bubbling casserole in the oven where the heavenly cheesy smell came from. When I made myself known, he jumped a foot from the ground. This was a good surprise.

It was almost brunch when I woke up. My husband told me that I could go play with the kids while he’s finishing up the brunch. I wouldn’t say no to a time spent with those adorable little sweethearts so I left him alone and did just that.

The brunch consisted of this amazing cheesy sweet potato with black beans casserole. The taste was strong and at the same time, mild, which makes it perfect for the kids. He was even able to make a simple crusty bread for it.

I love it whenever my husband cooks because he just has that Chef Hand, which I don’t naturally possess. He also always makes sure that there’s something special accompanying his cooking. This time, it was chocolate mousse.

It was one of the most fulfilling lunches I ever had.
