Enjoy A Fancy Tex Mex Night With This Chicken Burrito Bowl

How do you feed a hungry crowd with big appetite? In my case, I only have two answers for that: either make a casserole or make a crockpot rice recipe. A few nights ago, my husband received a phone call from his brothers saying they will be coming to visit. It’s not an unusual occurrence; my brothers-in-law often visit because they love playing with the twins. However, usually, they call a week before. That night, they called to tell us they would be coming the next day. As someone who was used to such a surprise visit, I didn’t even worry about food.

I knew my brothers-in-law love home cooked meal. They grew up in a house where home cooked meals taste like they were made by angels. My mother-in-law is a kitchen whiz; and up to now, she still got it.

I remember how much my brothers-in-law love Tex Mex, so I decided to make this amazing chicken burrito bowls for them. Everything they could possibly want was in there. It’s also a complete meal in one pot.

Again, the best thing about making this dish is that it could feed a small group of people with huge appetites. All I ever did was to add a bowl of salad for them to eat alongside the burrito. And I also made a chocolate mousse dessert to go with the coffee after.

It’s safe to say that it has been a really good dinner night for all of us. Our stomachs and hearts were satisfied.

Quick Tip: Using brown rice is recommended. It holds its shape better over longer cooking. Although it can be a bit hard to judge exactly when it will be done.
