Chicken Nachos Casserole: A Tex Mex Dream Team

Whenever my husband and I have a movie date, I simply couldn’t NOT have something to eat. Most of the time, it’s popcorn; because popcorn is the ultimate must-have snacks during movie time. But sometimes, I am craving for something with more flavor, therefore I buy nachos instead of popcorn. Well, except when it’s a horror movie; because who can eat nachos with all the gooey cheese in there when someone’s crying for help in the screen?

Nachos are my husband and mine’s favorite. It’s Tex Mex, and we’re huge fans of Tex Mex dishes. I remember when were just a new couple, we always had our dates in Tex Mex restaurants and fast food joints.

I make a lot of Tex Mex dishes at home too like casseroles and burritos. Sometimes I make homemade quesadillas too and we’ll just have a Tex Mex mini party along with our kids. We’re definitely huge fans!

This super easy chicken nachos casserole is one of our favorite homemade Tex Mex dishes. All of the flavors in here remind us of those days when we were just struggling college students. It also reminds us of home and the feeling of being carefree.
