Can You Foretell How Perfect This Rotel Dip Chicken Sandwich Is?

This Rotel dip chicken sandwich is not just for game nights though. You can serve this any time you want to, and to anyone. They will appreciate the tasty chicken and sauce combination more than you can ever imagine. This sandwich is one of a kind-it has all you ever wanted on it. You can adjust the flavors of course, if you think it’s too strong. But you don’t have to worry about people not liking it because they will!

Check out what our friends from The Cookie Rookie have to say about the recipe:

“These Rotel Dip Chicken Sandwiches are made in a crockpot, incredibly easy, and are sure to be a family favorite. They’re perfect for every day meals, but also perfect for holiday parties or THE SUPER BOWL! It will be here before we know it and we better be ready! I plan to have both cheese dip and these sandwiches. Can you blame me?”

I am not a fan of something super spicy, but I became a fan of this. When you take a bite of the sandwich, you will know that there is an absolute need for that spicy touch. You will definitely love this too, I promise!

Ingredients

  • 2 lbs (4 pieces) Tyson boneless skinless chicken breasts
  • 2 (8 ounce) blocks (16 ounces total) low fat Philadelphia cream cheese
  • 2 ounces Velveeta cheese
  • 1 can Rotel tomatoes
  • Sara Lee Hamburger buns
  • lettuce, onion, and more velveeta for garnish (optional)

Instructions

  1. Spray a slow cooker with nonstick spray.
  2. Add in the chicken, cream cheese, velveeta, and Rotel tomatoes into the slow cooker.
  3. Cook on high for 3-4 hours or on low for 6-8 hours or until the chicken is fully cooked through. Stir ingredients occasionally while cooking.
  4. Once chicken is cooked through, remove just the chicken from slow cooker and shred using two forks. Place the shredded chicken back into the slow cooker with the sauce and stir to fully coat/combine.
  5. Place the slow cooker on warm until ready to assemble your sandwiches.
  6. Assemble your sandwiches by using a slotted spoon to remove chicken from slow cooker, placing on a bottom bun. Top with lettuce and red onion and more velveeta if desired (see note above)
  7. Enjoy!
