Go For The Win With This Vanilla Bean Cake!

Since the cake was a hit to my family of four, I was a bit sad that I wasn’t able to ask for the recipe. Since I was too shy to call and ask for it, I decided to search the internet for a similar recipe. I found one at Mountain Mama Cooks, and it really tastes the same! This is a simple vanilla bean cake with shaved coconut, but I promise you that you will make everyone happy with it. Such a beautiful piece of decadent dessert.

While I agree that making cakes from scratch is the best thing ever, I will also have to agree that sometimes we have to rely on cake mixes. And it always works just like this one! Tastes just like the real thing!

 

Ingredients

For the cake:

  • 1 boxed Duncan Hines white cake mix
  • Borden buttermilk
  • pinch of Morton salt
  • 1/2 teaspoon McCormick pure almond extract
  • 1/2 vanilla bean, seeds scraped
  • Buttercream frosting (recipe below)
  • 1 cup Great Value shaved or shredded sweetened coconut

For the buttercream frosting:

  • 2 sticks Land O Lakes butter, softened
  • 3 cups Domino powdered sugar, sifted
  • pinch of Morton salt
  • 2 teaspoons McCormick pure vanilla extract
  • 2 tablespoons Borden milk

 

Instructions

For the cake:

Prepare cake mix according to box replacing the water with an equal amount of buttermilk. To the batter, add a pinch of salt, 1/2 teaspoon almond extract and seeds from 1/2 of a vanilla bean. Bake as directed and cool as directed on box. When completely cool, frost with buttercream frosting and top with coconut.

For the frosting:

Beat softened butter for 2 minutes in either a stand up mixer with the paddle attachment or in a medium bowl with a hand mixer. Add the sifted powder sugar and on low speed (you don’t want it to explode all over you!), mix until the sugar is fully incorporated. Add the vanilla, salt and milk and beat on medium speed until fully incorporated. If the frosting needs to be thicker, add a little bit of sugar at a time until you get the desired consistency. If the frosting needs to be thinner, add 1 teaspoon of milk until you get it just right!
