This Chili Tortilla Bake Is Everything You Want In A Dish! It’s Easy Too!

My husband loves this recipe so much. He said he could eat this all day and I don’t doubt that statement. He is a fan of these flavors (like me); and we often feast on such tasty food whenever we can. Even our sons love this food. I just had to give them a smaller serving because it’s a bit too rich for their stomachs (even if I already adjusted the seasonings). You can serve this dish any time of the day. We usually have this for breakfast or dinner. It’s meant to be enjoyed with the ones you love!

Ingredients

  • 1 pound tyson extra-lean ground beef (95% lean)
  • 2 cans (8 ounces each) Hunt’s no-salt-added tomato sauce
  • 1 can (15 ounces) Great Value black beans, rinsed and drained
  • 1 cup Green Giant frozen corn
  • 1 can (4 ounces) Old El Paso chopped green chilies
  • 2 tablespoons dried minced onion
  • 2 tablespoons McCormick chili powder
  • 1 teaspoon McCormick ground cumin
  • 1/2 teaspoon McCormick garlic powder
  • 1/2 teaspoon McCormick dried oregano
  • 6 Mission whole wheat tortillas (8 inches)
  • 1 cup Sargento shredded reduced-fat cheddar cheese

 

Instructions

  1. In a large skillet, cook beef over medium heat until no longer pink. Stir in the tomato sauce, beans, corn, green chilies, onion, chili powder, cumin, garlic powder and oregano; heat through.
  2. In an 11×7-in. baking dish coated with cooking spray, layer half of the tortillas, beef mixture and cheese. Repeat layers. Bake, uncovered, at 350° for 25-30 minutes or until bubbly.

Quick Tip: Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.
