Not Your Typical Mexican Casserole!

What I really love about this Mexican casserole recipe is that I can adjust the amount of the ingredients based on how I want the casserole to end up tasting. Since Mexican “food” itself is known for its strong flavor, I just have to go easy on some of the seasonings. My children couldn’t eat strong flavored food, at least not yet. This casserole is also really great for potlucks. This is what I contributed to one of my potluck with my churchmates. I was late and I thought they wouldn’t care about the dish anymore.

But I went home with an empty casserole dish! They said it was so flavorful and delish!

And my husband as well. He couldn’t keep his hands off this recipe!

 

Ingredients

  • 1 Bag of Santitas Tortilla Chips
  • 1 lb. of Tyson Ground Beef
  • 1 Packet of McCormick Taco Seasoning
  • 1 15 oz. can of Great Value Pinto Beans (undrained)
  • 1 15 oz. can of Great Value Black Beans (undrained)
  • 1 15 oz. can of Diced Tomatoes (optional)
  • 1 8 oz. Bag Sargento of Shredded Cheese
  • 1 Tsp. McCormick Pepper
  • 1/3 Cup of Water
  • Daisy Sour Cream (optional)
  • 2 Small Onions (thinly sliced)

 

Instructions

  1. Pre-heat oven to 375 degrees.
  2. Brown the meat in a large skillet.
  3. After the meat has browned, combine the pinto beans, black beans and diced tomatoes undrained, taco seasoning, pepper, onions and water. Simmer for 5 minutes.
  4. Layer the bottom of a 13X9 casserole dish with half of the bag of tortilla chips.
  5. Spoon half of the beef and bean mixture on top of the tortilla chips.
  6. Place the remaining tortilla chips in a layer on top of the mixture.
  7. Repeat step 4 using the remaining beef and bean mixture.
  8. Sprinkle an even layer of cheese onto the mixture.
  9. Place casserole in the oven and bake for about 10 min or until the cheese has melted and has slightly browned.
  10. Serve with sour cream.
