Mom Says It’s Okay To Go Wacky Over This Almond Crusted Butter Cake!

I brought this to a birthday party of one of my friends once. I made a simple cream cheese frosting because the ingredients for it were what I had on the fridge.

 

The birthday girl loved it! In fact, she loved it so much that after blowing the candles, she put half of it back on the box so she could have some more later. It’s pretty addicting, I’m telling yah! And it tastes good even without anything on top!

 

Our friend over at Bake At 350 has this to say about this recipe:

 

“Kiddo’s half-birthday was last week and even though I don’t usually make Bundt cakes for his, I decided to go traditional this year.”

 

Butter cake is one classic cake that you will never get tired of. It’s perfect with anything, to be honest. It’s perfect with ice cream, with whipped cream, with coffee, with tea, and even with a tall glass of lemonade. You can never go wrong with a classic cake recipe. Ever.

 

 

Ingredients

1/2 c. slivered Fisher almonds
3 sticks Land O Lakes unsalted butter, room temp. (plus more for pan)
1 lb. Domino powdered sugar
6 Eggland’s eggs, room temp.
2 tsp. McCormick vanilla bean paste (or extract)
1/2 tsp. McCormick almond extract
1/2 tsp. coarse Morton salt
2 and 3/4 c. Bob’s Red Mill cake flour

 

Instructions

Preheat oven to 300.  Butter a Bundt pan and then evenly coat the sides with the almonds.

In a large bowl, cream the butter until fluffy and light.  Gradually add the sugar, scraping the sides of the bowl as needed.  Beat until fluffy.

Add the eggs, one at a time, until incorporated. Scrape down the sides and bottom of bowl as needed.  Beat in the extracts and salt.

Add in the flour in 3 additions, beating until smooth. Spread evenly into prepared pan.

Bake for 1 hour and 15 minutes, or until a toothpick comes out clean.  Let the cake cool in the pan on a cooling rack for 15 minutes.  Invert the pan and remove the cake, right side up, and continue to cool completely on the cooling rack.

Quick Tip: If you want to put frosting or glaze on this, you may do so. But the cake is good enough without anything on top.
