Rita’s Sausage Cheddar And Olive Oil Muffins Got Everyone’s Thumbs Up!

I fell in love at first sight with this sausage cheddar and olive oil muffin recipe. I first tasted this during one of our potlucks after our church. We usually do potlucks once in a while as it strengthens the bond and friendship among us churchmates. Sometimes, we even bring our kids so they can play with the kids of my friends. We usually bring two types of dishes for everyone to share. And I always bring a pasta dish and a chicken dish. They’re easy to make and at the same time they’re safe dishes. Almost everyone eats pasta and almost everyone loves chicken. When it comes to potlucks like this, you will always consider if not all, at least most of your churchmates and decide on what you will contribute based on what everyone generally likes. At least that’s how it should be to me.

Some try their luck and bring anything they want to bring. Most of these friends of mine end up bringing home still half-full pots and pans or serving baskets. Sometimes, experiments work and sometimes, they don’t. And some of my friends’ experiments really do not work. Rita is not one of them. Rita’s experiments always turn out successful. Maybe because she tries to use a traditional recipe and just revamp it a little to give it a new taste. Her sausage cheddar and olive oil muffin is so successful that it became a mini business for her. People order the muffins from her. I found a similar recipe that tastes just as good. Quick Tip: The batter will be very thick. If it is too thick to fold in the cheese and sausage, add 1-2 tbsp of extra water.
