This Will Make You Yell “Hooray For Doritos!”

As I was preparing this dish, I had no idea if it would be a huge hit or an epic fail.  I was nervous because I did not have a back up dish, but I trusted my instinct that this would be good, and boy oh boy, was it amazing! The best part is, if you are a Doritos lover as my family is, you probably already have a bag of those at home, plus the rest of the ingredients which are so basic and simple. Not only is this absolutely amazing, but it is cheap and feeds a crowd.  That is amazing, if you ask me!

This casserole is not spicy at all and even my picky 5 year old gobbled it right up.  I topped mine with some fresh from the garden diced jalapeno because I like more of a kick,  and lots of lettuce and tomato to make it ‘healthy’

 

There are so many ways to switch up this dish and you can get two or three meals out of it.  That’s awesome for a busy mom!

 

 

Ingredients

16 oz can Old El Paso refried beans

4 chicken breasts, cooked and chopped

1 (10 oz) can of Swanson cream of chicken soup

4 cups Kraft Mexican shredded cheese, divided

1/2 cup McArthur milk

2/3 cup Daisy sour cream

1 can Ro-tel tomatoes, drained

1/2 packet of Old El Paso taco seasoning

1 (11 0z) bag of Nacho Cheese Doritos, crushed

 

Instructions

-Preheat oven to 350 degrees. Spray a 9×13 baking dish with non-stick cooking spray.

-In a large bowl combine the soup, milk, sour cream, Ro-tel, 1 1/2 cup of cheese and taco seasoning. Add chicken, and combine.

1st layer- Spread the refried beans in the bottom of the baking dish

2nd layer – 1/3 of the Doritos

3rd layer – 1/2 of the chicken mixture

4th layer – 1/3 of the Doritos

5th layer – 1/2 of the chicken mixture

6th layer – the rest of the cheese

7th layer – the rest of the Doritos

-Cover and bake for 30-35 minutes. (Bake the last 5 minutes uncovered)

-Serve with whatever toppings your heart desires and enjoy!
